The Dart River is about an hour outside of Queenstown. They'll pick you up. You travel out into "Lord of the Rings" territory, walk a little, then go on a crazy ride. Speedboats run in about 6 inches of water. They go very fast. They do 360s. The scenery is amazing. If you're anywhere near Queenstown and miss this, you'll kick yourself. Or you should.
